Meet one of the many friendly faces behind Grantley Hall. Join Luke Cole, Junior Assistant Bar Manager in the hotel’s iconic Norton Bar and Guardian of luxury Cognac brand, Louis XIII, as he chooses some of the best cocktails to be enjoyed over the Christmas period.



If you haven’t already discovered Grantley Hall then prepare to be impressed. Set in 37 acres of landscaped gardens and located on the edge of the Yorkshire Dales, this five-star hotel and wellness retreat is located only a ten-minute drive from nearby Ripon. As well as offering exquisite accommodation and award-winning spa and wellness facilities, the hotel is a food lover’s dream - boasting a diverse selection of bars and restaurants to suit all tastes from Michelin-starred fine-dining to tempting pan-Asian cuisine.


The principal bar located in the original 17th century mansion house is the Norton Bar, with its rich oak paneled walls, roaring fireplaces and views overlooking the formal gardens, this beautiful room used to be the library in the original house and is the perfect spot to explore the extensive cocktail menu, expertly created by Luke and his team of expert mixologists...


Chapter Two

Inspired by its history of being a library, the Norton Bar cocktail menu explores and reflects the infamous characters and duos from novels that we all know and love; perfectly blending traditional and contemporary ingredients and techniques to curate unforgettable cocktails.

Introducing ‘The Daring’ duo – the Dr. Jekyl and Mr. Hyde inspired cocktails based on Robert Louis Stevenson’s Strange Case of Dr Jekyll and Mr Hyde. ‘Dr. Jekyl’ is a golden amber liquid that contains Glenmorangie Sauternes Cask, Fino Sherry and White Cacao; whilst the ‘Mr Hyde’ is a darker drink concocted with Woodford Rye, Chocolate, Maraschino, Antica Formula.


100 Years of Cocktails

Tucked away in a corner of the Norton Bar is the ‘100 Years of Cocktails’, Norton Bar’s magical off-menu cocktail collection which is hidden amongst the books. Simply choose a book from the ‘100 Years of Cocktails’ bookcase and open the pages to reveal the cocktail card inside of the book. Take to the bar to re-live that year in a glass! This is the perfect experience for guests wanting to celebrate a birthday or anniversary whilst visiting Grantley Hall. Luke has selected the year 1920 as his favourite choice from the shelf. The Negroni is the drink of 1920 and is a classic cocktail from the roaring twenties. This Italian short cocktail has become one of the most popular stirred drinks and is presented over ice with a balance of gin, vermouth and Campari.


Perfect to make at home

If you sadly can’t visit Grantley Hall this festive season, Luke has created a cocktail that is perfectly easy and delicious to make at home instead when you’re hosting guests this Christmas! ‘White Christmas’ is a take on a White Russian and is the ideal cocktail to serve alongside canapés at your Christmas Eve party this year to your guests.


To make and enjoy yourself at home, simply mix:

30ml - Kalhua Coffee Liqueur

30ml - Disaronno

Top with half milk and half single cream and serve with a dusting of cocoa
