From the moment we arrived, we were greeted with warmth by owners Lorenzo and Jane. The atmosphere was effortlessly relaxed, yet elegant. We were offered a choice of seating and chose to dine al fresco. The setting, with its mix of natural beauty and stylish touches, offered a perfect escape from a hectic week.

The menu is short but well thought-out, offering seasonal dishes with global influences. For starters, I opted for the salmon mousse served with cucumber, chives, and crunchy croutons (£8). It was light, fresh, and delicately seasoned. John selected the roast beef tartare with rocket, lemon, and Parmesan (£8), which was impeccably presented and packed with bold, balanced flavours.
For the main course, I was drawn to the chicken supreme, served with chimichurri, roasted sweet potatoes, and a corn salsa (£24). The chicken was perfectly cooked, tender, juicy and infused with the herbaceous tang of the chimichurri. John chose the monkfish, which came with fregola, spinach and crispy bacon (£32). The dish was sophisticated yet hearty, with layers of texture and a depth of flavour that showcased the chef’s attention to detail.
We also had the pleasure of sampling a few hors d’oeuvres with our drinks: whipped feta topped with black olives and served on miniature wooden spoons. Paired with a crisp glass of my favourite Prosecco, it was an unexpected and delightful treat that set the tone for the evening. After finishing our mains, we moved indoors to the boutique-style interior, all soft lighting and elegant details, an ideal space for a date night or relaxed gathering.
What stood out, apart from the food, was Lorenzo’s passion for quality and community. He shared with us that all their ingredients are sourced locally from reputable suppliers such as Johnson’s Fruit & Veg, Wilkinson’s & Andrews Butchers and Tarbetts Fishmongers. This commitment to fresh, local produce is reflected in every dish. The menu changes monthly, offering guests the opportunity to return again and again for something new.
Perhaps most excitingly, Maybe Later regularly hosts wine tasting evenings - informal, intimate gatherings where diners can sample a curated selection of wines in the company of fellow enthusiasts. It’s the sort of personal, community-oriented event that sets this restaurant apart.
In every aspect - food, service, setting - Maybe Later delivers a thoroughly memorable dining experience. Whether you’re marking a special occasion or indulging in a midweek treat, it offers something truly special. Maybe Later is already gaining a reputation as one of Wetherby’s top dining destinations.
